Vegan Meatless Monday 2 (and some kitchen disasters)

This Monday’s meals didn’t turn out exactly as planned…

I made this cranberry bread for breakfast. Unfortunately although it looked great on the top the flour didn’t mix in on the bottom and it didn’t cook through so looks like it will be bananas and cantaloupe for breakfast. Which I like, but still.

I’m not sure what happened there, maybe I chose the wrong setting?  I’ve never made anything completely inedible in the bread machine before. I was kind of excited to make something with fresh cranberries so I’m pretty bummed about it. Plus I burned the hell out of my hand taking the pan out of the bread maker. It wasn’t the recipe – I ate a piece of the top crust and it would have been incredible. I think I’ll try it again when I get over severely not wanting to be in my kitchen unless it’s to get an adult beverage.

Lunch:

I made enough to pack for lunches all week because otherwise I’ll end up eating just a banana or fast food for lunch.

Earlier this week I made my own version of the Barfly‘s island salsa and it was so good I wanted to eat it with a spoon.  Granted the ingredients are all healthy, but that still may have been a bad idea.  So as an excuse to eat more of it I decided to morph it into island rice.  Score!

The salsa:

  • 1 can diced pineapple
  • 1/2 a diced red onion
  • 1 finely diced habanero
  • Fresh chopped cilantro to taste – is ‘lots’ an official cooking amount?
  • diced bell pepper (not green, just because it’s cooler with more colors!)

Island Salsa

I modified the salsa by using shredded pineapple and 3 chipolte peppers in adobe sauce instead of the habanero just because I had them and it sounded good. Then I cooked a cup of brown rice with 2 cups of water in the rice cooker and threw it all together with a drained can of black beans. Turned out kind of awesome if I do say so myself.

The first salsa with chunks of pineapple looks nicer as a dip but they were both really good. Here’s the end result of the island rice:

Island Rice

I’m going to go totally easy and just make a big green salad with a vinegar and oil dressing for dinner.  This is because of the stupid carrot fries.

So. I decided I’d be all cool and make carrot fries too, as a healthy vegan snack.  Why? Because I have still not learned to quit when I am ahead.  Here’s the recipe, they were great.

Cut about 2 pounds of carrots into fry shapes – I made mine on the thin side and about 2 inches long.

Toss them with 2 teaspoons of oil and 2 teaspoons of salt

I put the first half on one cookie pan and then added a tsp of chili powder, a tsp of onion powder, and a sprinkle of cumin on the second half and baked both pans at 400 for a little over 20 minutes, then put them under the broiler for a few minutes to crisp up a bit.

They were so good we ate them all Sunday and so they didn’t end up being part of meatless Monday at all.  But this little trip into cooking taught me many valuable lessons, so I thought I’d share them with you.

  • The drawer under the oven is NOT a broiler, it’s for storage
  • The garbage disposal is really easy to take out, but Google it first because the screws that look like they’re holding it in are not holding it in at all
  • All of the pipes under a kitchen sink come apart and go together pretty easily, and you don’t even need putty
  • Do not run your dishwasher and then walk away when your sink is clogged up
  • Do NOT peel 2 pounds of carrots into the sink, even if you have a garbage disposal, even if you’d swear you’d done it before with no ill effects

Ya. That’s how I spent my Sunday afternoon, how about you?  Sometimes I think it’s a miracle I haven’t yet starved to death or totally broke my entire house yet…

Took a leisurely 4 days to drive from Utah to Sout Took a leisurely 4 days to drive from Utah to South Dakota. Quite a different after being in the desert so long! 

These pictures are from my first outing in South Dakota, and yeah, I'd say it's pretty cool. For the record, the bison was walking up the left side of the road, so I pulled off on the right side a bit up the road to see if he would walk by. He crossed to my side and walked within a couple feet of the car!  I did not try to pet the fluffy cow.
I took a photo tour in Antelope Canyon! It's one o I took a photo tour in Antelope Canyon! It's one of those places that are 100% everything you wanted it to be. Stunning every step of the way. I got some amazing pictures but they don't do the reality justice.  Definitely go if you get the opportunity!

I am not sure if I was in or just near Escalante to be honest.  Either way, it's amazing how many completely different looking areas there are around here.

Hiked to the Maze Rock Art Site in Vermilion Cliff Hiked to the Maze Rock Art Site in Vermilion Cliffs National Monument. It's a short & easy hike to see these petroglyphs, about a 1.5 total out and back.  It's a really fun (remote) hike with very few people.

I cannot reccomend exploring National Monuments enough. They are just as awesome as our national parks, but usually have fewer crowds. Usually (not always!) they also have fewer amenities and more dirt roads, but they are awesome.

I've been in Utah for less than a week and can alr I've been in Utah for less than a week and can already tell one month isn't enough time. This area has more trails within a few miles than anywhere else I've stayed so far. And they've all been spectacular so far!!

This isn't really a hike - it's right off the road This isn't really a hike - it's right off the road. But how cool is this tunnel?? It's also pitch black and uneven footing in the middle.  Shockingly I didn't trip, but a light wouldn't have hurt. 

I've been in Utah for only a few days but I already know I won't be running out of new places to hike this month!
Horse Shoe Bend has been on my list of places I'd Horse Shoe Bend has been on my list of places I'd like to see in person for a while. I realized I was passing it on my way to the grocery store in Page, AZ and had to stop. Ten dollars and a mile and  a half round trip walk on a well graded path. So they said, but I'm not sure if it was even a mile total.
 And dog friendly!! I'm still super excited I got to see it in person.

The trail name in All Trails is Ghost Town Pahreah The trail name in All Trails is Ghost Town Pahreah Trail, but I saw no ghost and no town, though I did pass an old graveyard.  Decided to walk up the river a few miles and there was no direction you could look in at anytime that was not amazing.

I got to hike to Twin Falls while staying at a Har I got to hike to Twin Falls while staying at a Harvest Host on my way to Utah. I'm always amazed at the places I run into that I have never heard of. The Navajo Nation has an amazing trail system!

I was driving pretty much in the middle of nowhere I was driving pretty much in the middle of nowhere looking for a trail and saw a sign for Chaco pointing down a rutted dirt road. It was about 23 SLOW miles driving and then a 4 mile hike here. An amazing site! You walk past 3 smaller pueblos and lots of pictographs on the way. 

The ranger said you could spend 2 or 3 days exploring the park and I could totally see that. There's a few other long hikes. I think I took 5 hours walking 8 miles. There is so much history to see! And another win - very few people.

I had planned to go to Bisti Wilderness after Taos I had planned to go to Bisti Wilderness after Taos several months ago but had to cancel after my little hiking accident.  But I finally made it!  I'm really excited to explore the area. Day 1 was a five mile walk through amazing formations. Lots of petrified wood - I wasn't expecting that!

Hiked up Golden Canyon first thing this morning. Hiked up Golden Canyon first thing this morning.  This is why a month in each place isn't too long. After work random hikes close to home and go straight to one of the busy hikes weekend mornings.  You pass the crowds coming in as you're leaving. And in this case, beat the heat.

Death Valley keeps showing new shockingly beautiful places. I'm already planning to come back.

It's wild how many springs are in what looks like It's wild how many springs are in what looks like a desolate, dry landscape. No swimming allowed but it's very tempting!

You do have to drive down a long and dusty road to get to this one. You can no longer guess my car's actual color...
