Summer of Rum is on it’s Way!

Did you know there is a national Rum Day?  Well there is and it’s this coming Saturday, August the 16th.  Guess where I’m celebrating it?  At the Summer of Rum Festival!  If you’re anywhere near Tampa you should too.  Why you ask?  Because there’s going to be Rum Zones, Rum Shacks (small run zones) food trucks and also rum.  Good enough reasons for you??  Check the festival out here.

Even better is the fact that it’s going to be held at the Cuban Club which means it’s partly outside and partly inside (inside = air conditioning!). Also, the bands sound pretty awesome, there will be both ska and reggae!   Sounds pretty much perfect to me.

Check these guys out.

So, if you want to go you can get general admission tickets for $25, VIP for $95, or win a pair of GA tickets from me.  I have 2 pairs to give away, I’ll contact the winners on Friday morning. You do have to be 21 or older to get in, no kids and no pets allowed.

Enter to win here!  a Rafflecopter giveaway

I received two VIP tickets to The Tampa Bay Rum Festival in exchange for writing a review and this giveaway. As always, my opinions are all mine.

My Race Ragz – Review and Giveaway!

What would you put on a running shirt if you were inventing your own?  Turns out mine would be vaguely sarcastic.  Imagine that.

20140715_180436

My Race Ragz lets you choose from about a ton of pictures and sayings, or you can create your own. They have motivational, funny, and even some for barefoot runners!

20140715_180408I haven’t been able to try my shirt out on a run since I haven’t been feeling well (and as you can see I used that excuse to not hang up my laundry too…) but I wore it around anyways and I absolutely love it.  Their shirts are really comfortable and shaped to fit nicely.  I ordered a size up and I’m glad I did – I would definitely recommend you do the same if you order one of their shirts!

I believe they only have white colored shirts, but the graphics can be most any color you’d like.  I actually chose black. I know, how boring I must be. But I like it!

I  know you want to create one of these, and here’s your chance!  My Race Ragz was kind enough to give me a performance shirt to review AND one to giveaway!  (US shipping only, sorry everyone else)

Enter below to win, and go ahead and make your shirt all kinds of colorful and you! You have until 7/25/2014 to enter; the winner will be emailed the following weekend.

a Rafflecopter giveaway

I am DETERMINED to get out for a run this week, if only on the treadmill and I’ll try my shirt out then, it’s moisture wicking as well as cool looking.  Fortunately I finally realized that it would be best to post my review without waiting around for all that.  🙂

Oh, and since you can personalize these with your own saying you don’t have to run to love one of these shirts!

Almost Time for The Tampa Bay Margarita Festival!

There’s a rumor going around that margaritas are Tampa’s drink of choice.  I have no idea if that’s true or not but I know if I had to pick a poison tequila is by far the tastiest!  Maybe it comes from spending so many weekends in Tijuana when I was younger or maybe it’s just that good, I don’t know.

Regardless, if you are also a fan you really need to join my out at the Tampa Bay Margarita Festival coming up Saturday, May 24th. There will be margaritas with Sauza (an old favorite of mine), Cabo Wabo (a favorite of everyone’s) and tons of other different tequilas. Bud Light’s Lime-A-Rita will be there and if you aren’t a tequila fan there’s Coronas and HRM Rex Goliath wine. And also, apparently there will be naked turtles there. Strange but true.

Naked Turtle

Of course they have to keep your designated driver happy too, so there will be lots of music and games and the evening will be topped off with fireworks. Los Lonely Boys will be headlining the show and there are plenty other bands starting after the gates open at 1:00.  I for one cannot resist sitting on the lawn listening to  live music, I can’t wait. Here’s a sample of one of the bands, Thomas Wynn & The Believers. Try and tell me this and a margarita isn’t the definition  of a perfect chill weekend.

The festival will be at Curtis Hixon Waterfront Park and is being put on by the same people who did the Tampa Spring Beer Fling so I expect it will be a blast. Which is why you want to go too, right?  You can get your tickets here, they’re $15 now or $20 at the door for general admission or for $85 ($100 at the door) you can VIP it and your ticket will include all of your margaritas.  Sounds good to me!

What could be better?  How about winning a pair of general admission tickets? I have 2 pairs to give away, I’ll announce the winners here Tuesday the 20th.

Taste of South Tampa 2014

Living in Florida so rocks.  Especially being right outside of Tampa, they have SO many great things going on all of the time.  You need yet another example?  How about Taste of South Tampa coming up April 13th at Hyde Park Village?

Taste of South Tampa

It’s a chance to sample offerings from a variety of local restaurants, breweries and lots more.  Keely & Curley Winery is going to be there!  I love their blueberry wines. Actually I went to a tour there once and they have a lot more than just blueberry wines! There’s also going to be coffee brewers, beer brewers, pizzerias, grills, it sounds like a little bit of everything.

One place I’m excited to learn more about is The Florida Cane Distillery. They make micro-distilled vodkas entirely of Florida ingredients. How cool is that? Check out these Florida flavors!

I think you should go.  So do the folks at Taste of Tampa, they gave me 2 general admission tickets to give away!

Enter here to win, the winner will be announced April 2nd!   a Rafflecopter giveaway

You can follow Taste of South Tampa on Facebook and Twitter to keep up to date on who all will be at the there, and you can get your tickets here. Tickets are $35 in advance with discounts if you are under 21, over 60, or in the military.

Oh, and if you’d like a little bit of good karma to go with your good times then you should know that a portion of this events profits are going to Metropolitan Ministries.

Spring Beer Fling (and giveaway!)

Guess what’s coming to Tampa in just 2 weeks.  The Spring Beer Fling!  What the heck is that you ask?  How about a whole day of surf rock, games, and as much retro fun as you can handle?  Oh yeah, and beer. One choice will be Samuel Adam’s spring seasonal beer, Cold Snap.  I tried it at the pub this weekend; trust me, you should have a glass!

It sounds like a whole lot of fun, and for those who aren’t that into beer Twisted Tea, Deep Eddy Vodka, and Angry Orchard will be there as well. I’m a big Angry Orchard fan!

I’m really looking forward to the music; I LOVE surf rock. Seriously, how could you not?  Here’s one of the bunch of bands that will be there.
[youtube http://www.youtube.com/watch?v=X6xgMJpVrvo?rel=0]

To top it all off the night’s going to end with a ‘Beach Ball Drop Spectacular’.  There’s something you don’t see every day!

Want to come out and join the fun?  General admission tickets are $15 in advance or $25 day of and include entertainment, games, and activities including the beach ball drop.  You also have the choice of VIP tickets which include all of that and also access to their ‘retro lounge’, unlimited drinks, a meal ticket for one of their vendors, and a Spring Beer Fling pint glass.  How cool is that? The VIP tickets are $85 in advance or $100 day of.  They’re 75% sold out already though, so there may be none left the night of the bash!

The Color Run Is About to Hit Tampa!

In November I mentioned that I’m running The Color Run with my kids this year.  Only a few days left!

My son was excited, then decided he didn’t like running, then became excited all over again and not only is running with me outside, he also is running on the treadmill some nights.  I couldn’t be happier about how this is motivating him and his sister to take up running.  It must really be the happiest 5K on the planet, since I’m already happy!

This year The Color Run is going all Kaleidoscope-al.

ColorRunWhat does that even mean you say?  Well.

Every registered Color Runners get an official The Color Run Race Kit including:

  • A custom t-shirt
  • Tricolor headband
  • Amazing shoulder sling bag
  • Tattoos
  • and more! (I always like and mores)

That’s super groovy and all, but what about the race course you ask. Well.

  • Epic Finish Festival
  • Unique Kaleidoscope attractions on the course
  • Incredible photo opps
  • Awesome Kaleidoscope fun at the finish festival!

They used the words epic and awesome and I thought I was the only one who ever did so I’m kinda impressed just because of that.  🙂

Anyways, my Children of the Corn are running it and I think you and yours should too!  When you sign up don’t forget to use the code Color5Off when you register (it can’t be applied later) for a $5 discount to sign up for a run in any city and if you sign up as part of a team of 4 or more you get an additional $5 off per person. giveaway•Meatless Monday•Vegetarian

Vegan Meatless Monday 6 (on a Tuesday)

Yes, I’m doing my Meatless Monday post on Tuesday.  I was ill all weekend and had made the food and all but wasn’t up to actually typing it all out.  Pathetic, I know but lying doesn’t make it different. Plus I figure it’s a little like spaghetti Tuesday on a Wednesday, and what’s better than that new tradition?

Second, we have a Spartan Race winner!  Seth, email me at kindazennish@gmail.com and I’ll send you your code, congrats!

Anyways, I’m only posting dinner this week, see above for why. BUT.  It is excellent, you can have it for breakfast, lunch and dinner and still be happy. Plus a recipe for salsa which you don’t really need for the enchiladas but you must make it anyways and eat it on everything you have for the next week.

I would never in a million years thought I’d have enchiladas without cheese and not miss the cheese, but that’s what happened.

Salsa:

  • 8 medium sized tomatoes, diced (I usually use 15 romas, but these were on sale so…)
  • Juice of 2 limes
  • 1 bunch cilantro, cut up a bit (not to be overly technical but…)
  • 1 red onion, diced
  • 7 cloves of garlic, finely diced (or to taste)
  • 1/2 Tbsp. salt
  • 1/2 Tbsp. pepper

Just throw it all together in a big bowl, stir it up and eat with chips or over pretty much anything. I hand dice the tomatoes just because I threw them in the ninja once and it wasn’t pretty.  Still tasted good though!  This is one of those things that tastes better the next day if there’s any left.  It makes quite a  bit.

Tip:

If you have kids have them roll the limes as much as they will between their hands while you do the other stuff. Squishy limes = more juice.

For the enchiladas:

Corn tortillas & black olives,

Thin sliced lettuce, chopped tomatoes, and jalapeno slices for optional garnish/topping

Enchilada sauce:

  • 2 15 oz. cans tomato sauce
  • 4 cups water
  • 5 Tbsp flour
  • 3 Tbsp chili powder
  • 1 tsp granulated garlic
  • 2 tsp dry oregano
  • 2 tsp cocoa powder
  • 1/2 tsp cayenne red pepper
  • 1 tsp cumin
  • 1 tsp onion powder

Enchilada filling:

  • 2 cans black beans, drained
  • 1 can re-fried beans
  • 3 cups sliced spinach (remember it shrinks when you cook it)
  • 1/4 cup fresh cilantro
  • 1 fine diced white onion
  • 2 fine diced frying peppers ( I didn’t think that was the real name but it was on the sign and I Googled it and yep, that’s them)

Frying peppers

Just mix it all up in a decent sized bowl and put it in the fridge till you’re ready to roll. Ready to roll?

I always put a ladle full of enchilada sauce on the bottom of the pan. Why? Because that’s just the way it’s done! I had made the sauce and filling in the morning an rolled them up right before cooking so I had to heat up some sauce to dip the corn tortillas in.  I like to use a pasta bowl because they’re low and wide, perfect for dipping tortillas in.

Tips:

  • You have to dip the corn tortillas in warm sauce so they don’t tear when you roll them.
  • The enchilada sauce will taste too tomato-y until after it’s baked.  After it’s baked you’ll be hooked and will never buy canned sauce again, except maybe on those lazy days.
  • Take out all the tortillas you’ll need, put them above the bowl of enchilada sauce.  Put a plate to roll them on to the right, touching.  Finally, put the pan you are going to bake them in to the right of that, touching. If everything is out and as close together as possible it’ll minimize the unavoidable mess.  Once you have dipped your fingers in the sauce you won’t want to reach back in the tortilla bag or anywhere else till you’re done.  (That’s where my kids come in).  🙂
  • You need less filling per enchilada than you think. Always.

Cover the pans with foil and cook in a pre-heated oven at 325 for an hour.

Ta-da!

VeganEnchilads

Top with a big spoonful of salsa and serve a little salad on the side to mix in and – Dinner.

I made a double batch of sauce and had about half left, I made two pans of enchiladas and had a bowl of filling left that I intend to use for nachos which shall rock.

I’ve never actually had a recipe for enchiladas, I always make them different but this one’s a keeper.  Do you have an awesome vegetarian (vegan or not) enchilada recipe? Do share here or share the link!

You know I love obstacle and mud runs. But am I ready for the Reebok Spartan Race?  Mmm, probably not.  But it’s been added to my to-do in 2014 list!

Not sure what a Spartan Race is all about? It’s about finding out just how far you can push yourself – and about smiling as you cross the finish line. Well, that’s my goal anyway.
